- Ullage
- Also known as headspace. It is applies to the unfilled air space at the top of a barrel or bottle of wine and, with time, this space tends to grow. It also refers to the practice of topping off a barrel with extra wine to prevent oxidation.
- Underripe
- A negative tasting descriptor for a wine made from grapes that didn’t reach full maturity.
- Unfiltered
- A wine that was not filtered. It may contain some particles in suspension.
- Unoaked
- Wines that were not aged in contact with oak. Also known as unwooded.
- Up-front
- A wine that has a good attack, but that leaves little impression at the back of the mouth.
- Uva
- Italian word for grape.
- Uvaggio
- Italian word for blend. A wine that is made from a blend different grape varieties.
